Finding a Unicorn would be an easy option for many mothers, rather than making their kids eat healthy food. The best veggies and fruits find a way into the trash, and the unhealthy foods are adored by the young ones. In fact, the daily menu is decided based on the choice of the kids.

Many parents hardly find time to cook different dishes for everyone in the family and end up with noodles, which the kids never complain to complete. For the mothers, and of course, fathers who struggle every day to ensure their kids get nutrition, easy recipes that make cooking fun, and eating healthy are listed below.

1. Broccoli Bites

This simple dish certainly will make your kids go gaga after broccoli. Use either fresh steamed broccoli or thawed and chopped broccoli that is drained off all the liquid. Grate cheddar cheese, and you would require a half cup of it.

Take 3 eggs and salt and pepper to suit taste. Seasoned Italian breadcrumbs of 1 cup are also needed. Now, mix everything together. Lay a baking sheet and place the mixture after making them into patties.

In the oven, heat this for 25 minutes at 375-degree Fahrenheit. After fifteen minutes turn the patties to ensure both sides are cooked. Now, your kids wouldn’t wait for them to cool.

2. Avocado Chocolate Pudding

This nutrition packed chocolate pudding will never let your taste buds disappointed. Blend 10 dates with 1 cup of coconut water. Then add 2 ripe bananas, ½ avocado, ¼ cup creamy butter, ¼ unsweetened cocoa powder, and blend together.

Take a bowl and transfer the contents of the blender into it. Slice banana and strawberry. Also, a few blueberries would do. Spring of mints with these sliced fruits can be used for garnishing this appealing pudding.

3. Spinach Lasagna Rolls

Take a 9*12 baking dish. Preheat the oven to 320-degree Fahrenheit. Fill the bottom of the baking dish with 1 cup of sauce, preferably homemade marinara sauce. Mix together spinach, ricotta, Parmesan, egg, 1/2 teaspoon salt and black pepper in a bowl.

Now, use a wax paper to spread the lasagna noodles on the counter. Over the noodle spread a part of the ricotta mix you have prepared. Roll carefully and place on the dish. The same process must be repeated with remaining noodles. Put a spoon of mozzarella cheese and the remaining sauce on the rest of the noodles.

Bake for 40 minutes. You can make a minimum of 7 rolls. This will leave your kids hooked to your preparation for days to come.

4. Baked Chicken Fingers

This yummy healthy recipe requires boneless chicken,2 eggs, 1 cup blanched almond flour, 1 cup of finely crushed corn flour, black pepper that is freshly ground, and a pinch of crushed red pepper.

Season the chicken with salt and pepper. Mix flour, cereal and the Italian seasoning together. In another bowl beat the eggs. Dip the chicken pieces in the egg mixture, and then roll in the cereal mixture.

Bake for 25 minutes in the oven that is preheated to 350 degrees Fahrenheit. When the chicken turns light brown, it’s ready.

5. Black Bean and PepperJack Quesadillas

Dice a red onion, 1 red bell pepper, 1 jalapeno, and 3 cloves of garlic. In a pan add 2 spoons of oil and sauté all these. Add poblano pepper and corn to this. Refried beans should be heated in a separate pan, and taco seasoning should be added to this.

Add cumin, chilli powder and salt to the veggies when they are cooked fully. Grate pepper and cheese and keep them aside, while the veggies are on the stove.

Now, take a tortilla, and add ¼ cup of refried bean mixture, and ¼ veggie mixture on it. Top it with the grated cheese. In a pan, heat olive oil. Place the tortilla after folding it gently into the half.

Toss it gently and ensure both sides are cooked. Cut into slices, and Greek Yogurt is the best thing that goes with this dish.

When you try your hands with these recipes, for sure, the kids would love to taste your recipes, regardless of what you prepare.

One question though- Why take all these efforts? The answer is simple- to make sure your kids eat well. Right?

But have you considered the fact that, apart from providing your kids with a healthy diet, your job is to provide for their other needs like education and extra-curricular activities as well? Have you prepared yourself financially for the same?

If not, children saving schemes or child education insurance can help you in this regard.

Typically, children saving schemes serves two functions:

• Financially securing your child’s future at major milestones such as higher education and marriage
• Protecting your child’s future in case of your unfortunate demise

In simple words, children saving schemes help build a corpus for your kid’s future and also provides a life cover. So, go ahead and purchase child education insurance for your child, but always compare quotes before making your final decision.
